Here at the school we offer a wide variety of culinary programs for all ages and abilities. 
Our motto is: HAVE FUN WITH FOOD!  And our classes reflect this.

THE ART OF FINE COOKING SERIES – This series consists of seven programs in all. Starting with

THE ART OF FINE COOKING I:This program will teach you professuional techniques that you can use in your everyday cooking. This is a building block type of program with each sOur eries building on the previous one, we therefore strongly suggest that all students begin with the first series which covers numerous basic techniques including, Sauteing, Braising, Roasting, Grilling, and the secrets of successful egg cooking. Also included in the first series is the making of mayonaises, vinaigrettes, souffles, mousses, and chicken stock. The emphasis throughout this program is culinary techniques and all recipes are designed to illustrate the various skills being taught.

PASTRY AND BAKING PROGRAM – We offer a wide variety of classes in this program.

BEGINNERS BREAD BAKING includes the Making of French Bread, Bagels, Challah, pita and Focaccia.

ADVANCED BREAD BAKING covers the mysteries of  the sour dough. Chibatta and Chocolate Cherry Bread are also included in this class

Pie dough 101 will make a successful pastry maker out of all who attend, and will make you eager to learn the art of puff pastry making in our Advanced Pastry Class.

Other baking programs include:

SWEET YEAST BREADS, where we make croissants, danish and brioche doughs,

CREAM PUFFS & BEYOND a class which shows you that there are many other things to be made with this famous dough besides cream puffs and profiteroles.

CAKE MAKING  both basic, for the novice and advanced for the more experienced cake maker, which includes good basic decorating/icing techniques.

INTERNATIONAL COOKING – Our Pittsburgh “staycation”, prepare and enjoy cuisines from around the world. During our culinary "tours" we visit Greece, Thailand, Morocco, Spain, India, Mexico and a trip to New Orleans to savor good olde Cajun and Creole comfort food. These international classes are intended to whet your appetite and to introduce you to the various cuisines and ingredients unique to the various countries we "visit". Hoping that you will take this new found knowledge and venture still further into the preparation and sampling of the foods of the world.

FOODS OF GREECE:During our "trip" to the ancient Greece we will prepare: Hummus, Spanikopia, Moussaka, Broiled Salmon w/Citrus Sauce and of course Baklava.

FOODS OF THAILAND: This wonderful asian cuisine, invites us to sample, fish sauce (Nam Pla), preserved turnip, galanga and shrimp paste and many other strange ingredients, while we prepare a delightful meal that includes a Green Chicken Curry and Pad Thai as well as a spicy coconut dessert.

FOODS OF MOROCCO: This colorful norther African nation, is famous for its lamb and couscous, and we will be serving both of these along with a variety of mezze (appetizers) including, Borek and a bulgar salad with walnuts & red pepper

FOODS OF SPAIN: The famous Paella will be proceeded by a selection of tapas, including the firey Romansc and Mushrooms marinated in a Sherry Vinaigrette. Dessert will include a mouthwatering cake made with the famous Valencia oranges.

FOODS OF INDIA: Not all indian food is hot but it is always spicy. Naan bread, cucumber riata and tomato chutney will accompany a Chicken Kashmiri and a Vegetable Jalafrazi. And for dessert Mango Lazzi and Banana Fritters

FOODS OF MEXICO: Food from South of the Border is not all nachos and enchiladas. We will make Chicken with Mole (chocolate) Sauce, Lime Soup, Chilies Rellenos and  a silky smooth Orange Flan.

CAJUN SOUL FOOD: Foods of the Big Easy, Chicken Gumbo, Shrimp Ettouffe and for dessert a Sweet Potato Pecan Pie. "Laissez les bons temps rouler!"

PIEROGIE MAKING: What international cooking series in PIttsburgh would be complete without a Pierogie making class. Come and learn the traditional techniques taught to us by some of the older generation of polish inhabitants of the South Side.

COUPLES NIGHT** – The ultimate dining experience. We select a different menu every month, (which is posted on the calander) for you to cook and enjoy with your fellow classmates. It's a fun night out and a great way to meet new friends!

** The emphasis of the couples night is not instructional, but for everyone to have a fun evening preparing a delicious meal under the guidance of a professional chef**

SEASONAL PROGRAMS – Whether its Holiday Cookies or a Backyard Cookout we offer a range of unique classes throughout the year. Please refer to the calander for our current seasonal classes.

WINE THEMED PROGRAMS – These include Wine Tasting Classes and monthly Wne Dinners with our resident wine expert, Jerry Metallo. Jerry expertly matches each month's unique menu with a selection of 5 different wines.

KIDS – Age appropriate classes are held throughout the year and include events like Valentine Treats, Easter Celebration, Scary Halloween Treats, Thanksgiving Feast, Holiday Cookies, Gingerbread House Making as well as special Kids in the Kitchen classes held on public holidays like Martin Luther King Day, Presidents Day and Columbus Day.
