REGIONAL ITALIAN COOKING: WE OFFER TWO PROGRAMS OF REGIONAL ITALIAN CLASSES.

SERIES ONE:This is a new 5 class programwe will visit 5 very different and exciting regions of Italy and talk about the food, culture and history of each one, and how these various influences have shaped their unique culinary charateristics.EMIGLIA-ROMAGNA, TUSCANY, LOMBARDY, ABRUZZO and the southern region of CAMPANIA will provide us with recipes which we will prepare and enjoy during the evening.

SERIES TWO: 5 Additional culinary regions are visited during this 5 class series: VENUTO, PUGLIA, CALABRIA, SARDINIA AND FRIULI-VENEZIA GIULA. Some of the dishes we will prepare include: Roasted Lamb with Fennel and Eggplant/walnut Ravioli from Sardinia, Clams in Tomato Sauce and Tomato Forcaccia from Calabria and Rich Pork, Leek & Red Pepper Stew and Ricotta Strudel from Friuli-Venezia Giula

NUTRITIONAL WEIGHT LOSS PROGRAM:

 The focus of the nutritional cooking series brings us right to the root of nutritional eating. A healthy lifestyle shouldn't sacrifice flavor, variety, and especially time. Our goals are to break the misguided perception that healthy food is boring, mono-toned, and inconvenient. Through this cooking series, we will apply Gaynor's Fine Cooking techniques and learn how to cook nutritionally sound food, learn current health/food trends (making almond milk, quinoa, utilizing cruciferous vegetables,vegan cheese, plant based diets), explore various ethnic cuisines that emphasize a nutritional sound meal, and how to plan your meals accordingly throughout the day. The end goal is not to worry about calorie counting but to have a base understanding on what it takes to have a nutritionally fulfilling meal that is not only delicious but convenient for our day to day life with the least amount of stress. Food is supposed to be fun, so why not healthy food?
